Course Description:

This course provides a basic understanding of the Supervisor's role and responsibilities in the recruitment, selection, training, development and disciplinary process of hospitality employees.

Course Objectives:

     1.       Describe the primary role of the Supervisor
2.
        Outline the Supervisors obligations and responsibilities to owners, customers and employees.
3.
        Understand basic theories of people management.
4.
        Explain the concept of leadership on the job.
5.
        Describe and give examples of 4 leadership styles.
6.
        Describe various types of communication.
7.
        Explain how effective communication skills are important to success as a hospitality supervisor.
8.
        Describe common obstacles to good communication.
9.
        Outline common problems with business writing.
10.
     List guidelines for effective business meetings.
11.
     Define the term motivation and explain the Supervisors role in motivation.
12.
     Identify 9 ways to build a positive work climate by focusing on employees as individuals.
13.
     Discuss 2 ways a Supervisor can build a positive work climate.
14.
     Define job analysis and describe the process for creating one.
15.
     Define performance standard and list several examples of performance standards that may be used.
16.
     Write a job description using performance standards.
17.
     Identify common sources of workers in the hospitality industry.
18.
     Discuss the most used methods of recruiting and evaluate their usefulness.
19.
     Discuss and evaluate the standard tools and practices for screening people and selecting the best person for the job.
20.
     Discuss importance of training in the hospitality industry.
21.
     Outline factors that help employees learn.
22.
     Cite benefits of training and the problems encountered providing it.
23.
     List 6 skills necessary for effective classroom training.
24.
     Explain the importance of orientation and identify the kind of information to be covered.
25.
     Define four essential elements of successful discipline.
26.
     Compare and contrast negative and positive approaches to discipline.
27.
     State basic guidelines for administering discipline and explain how to avoid common mistakes and pitfalls.
28.
     Discuss problems of terminating a worker who has underperformed.

Prerequisites and Co-requisites:
Basic reading and writing skills and familiarity with using the Internet and a basic word processing program.

Assessment and Grading
Testing Procedures:
Students will be expected to complete weekly quizzes and the end of course exam.
Grading Procedure:
Students will be graded on their weekly participation in the class discussion topics. In addition, students will be expected to complete assigned workbook assignments, readings, and quizzes.
Grading Scale:
70% and above = S
69% and below = U
Assignments and Participation
Class Participation:
Students are expected to actively participate in all elements of the course including discussion boards, chat sessions and completing group projects.
Course Ground Rules
For example, Participation is required, Expected to communicate with other students in team projects, Learn how to navigate in WebCT, Keep abreast of course announcements , Use WebCT email as opposed a personal e-mail address, Address technical problems immediately, Observe course netiquette at all times. 
Guidelines for Communications
Email:
  • Always include a subject line.
  • Remember without facial expressions some comments may be taken the wrong way. Be careful in wording your emails. Use of emoticons might be helpful in some cases.
  • Use standard fonts.
  • Do not send large attachments without permission.
  • Special formatting such as centering, audio messages, tables, html, etc. should be avoided unless necessary to complete an assignment or other communication.
  • Respect the privacy of other class members
Discussion Groups:
  • Review the discussion threads thoroughly before entering the discussion. Be a lurker then a discussant.
  • Try to maintain threads by using the "Reply" button rather starting a new topic.
  • Do not make insulting or inflammatory statements to other members of the discussion group. Be respectful of other’s ideas.
  • Be patient and read the comments of other group members thoroughly before entering your remarks.
  • Be cooperative with group leaders in completing assigned tasks.
  • Be positive and constructive in group discussions.
  • Respond in a thoughtful and timely manner.
Chat:
  • Introduce yourself to the other learners in the chat session.
  • Be polite. Choose your words carefully. Do not use derogatory statements.
  • Be concise in responding to others in the chat session.
  • Be prepared to open the chat session at the scheduled time.
  • Be constructive in your comments and suggestion

Links to library materials (such as electronic journals, databases, interlibrary loans, digital reserves, dictionaries, encyclopedias, maps, and librarian support) and Internet resources needed by learners to complete online assignments and as background reading must be included in all courses.
